Thanks to the adjustable speed, the dough mixer is particularly suitable for the preparation of hard and soft dough, such as bread, pizza, biscuits, piadina, etc., as well as dough with high hydration, such as e.g. Pinsa Romana, gluten-free dough and pre-dough. The S version has a removable bowl, which makes it easier to remove the finished dough and clean it.  The HH version also has a reverse gear and a modified angle of the centering rod, which makes it easier to work with high hydration and biga doughs.
